Since this season we have been a partner of the Vis & Seizoen (Fish & Season) Foundation. This is an initiative of one of our suppliers, fishmonger Vishandel Jan van As. This foundation has set itself the goal of structurally improving sustainability of fish consumption and supply in the catering industry. A sustainably caught fish in the right season gives the best taste, highest quality, and a good margin.
According to a carefully drawn up fauna management plan, the National Park Zuid-Kennemerland manages the growth in the number of fallow deer. As a result of overgrazing, they ensure that the population in the dunes is regulated. The Simmental cattle live on Ab Kneppers’ farm in Velserbroek. This has allowed our chef to create delicious dishes for on the menu.
Brandt & Levie, a sustainable company since 2011, is known for making use of all of the pig. The owners both come from the catering industry and believe in the Slow Food philosophy. They both started as chefs and have grown into sausage makers with the goal to responsibly produce the best sausages.
Fons Hof has been around for almost 60 years and is a household name in Haarlem. You can taste that they make most of their snacks themselves. If you would like to have a drink and a snack, treat yourself to something from the snack menu. For example, choose Fons Hof’s bitterballen, which are mini round croquettes. Fons Hof’s bitterballen are a bit bigger that the traditional bitterbal, so there is more to enjoy!
